Cauliflower Rice

I love my hubby, but he doesn't eat nearly enough vegetables to satisfy me.  So what do I do?  I add cauliflower to his rice.  I'm sneaky like that.  Not that he likes rice too well, but he'll eat some.  When he does, he'll get some extra veggies he didn't even know about.  The best part?  He either didn't taste it or ignored it.  Either way, he ate it!  (Adding cheese helps a bunch!)

Cauliflower Rice

Makes 8 servings

12 oz cauliflower florets
3 tablespoons butter
6-8 cloves garlic, minced
1 cup brown rice, soaked for 8 hours
2 cups vegetable or chicken broth
1 cup water
1 bay leaf
1 cup Mozzarella cheese
3 tablespoons cream cheese
  1. Heat butter in a saucepan and add garlic; saute for 2-3 minutes.
  2. Add rice and stir to coat in butter; saute for 2-3 minutes.
  3. Add broth, water and bay leaf.
  4. Simmer rice until it is al dente.
  5. Meanwhile, in a food processor, puree cauliflower (if cauliflower is raw, steam until tender).
  6. Once rice is done cooking, turn off the heat and add cauliflower, mozzarella and cream cheese.
  7. Stir to combine cauliflower and melt cheeses.
  8. Add salt and pepper to taste.
  9. Serve.
